
All You Can’t Eat - The Frik Show
Each year, 600 million frikandels (a dutch kind of sausages) are eaten in the Netherlands, which makes it the most widely consumed snack. This project is a performative cooking show that acts as a service for farmers to transform the 'fifth quarter' of their pigs into frikandels.
The fifth quarter of the pig represents 25% of the weight of the animal and refers to the parts that don't have any economical value within the meat industry: pig snouts, tails, ears and other internal organs. In the gastronomic world, this can be translated as a type of 'offal' meat.
In 2021, the Dutch government announced a 25 billion euro plan to reduce livestock numbers in the country by one-third in response to excessive nitrogen levels in the air. Given the ecological and economic pressure on the shoulders of pig farmers, how will they cope with having a third of their livestock taken away from them?
By selling frikandels made out of repurposed offal parts, they can make the most out of every animal and claim its whole economical value. It also shows consumers that it might be time to change the way we consume and stop looking at resources as if they were infinite.
